Diversity and warmth define the Languedoc AOC, which since 2007 has carried forward the former Coteaux du Languedoc appellation over an enlarged area covering most of the Languedoc hillsides. For white wines, the regulations require at least two grape varieties from a range including bourboulenc, clairette, grenache blanc, marsanne, piquepoul blanc, roussanne, tourbat and vermentino, complemented by accessory varieties such as viognier. This 2016 shows a pale, golden colour with aromas of acacia and orange blossom.
Grilled fish or fish in sauce, poultry, Mediterranean cuisine, goat's cheese. Serve at 10–12 °C.
Château Capion lies at the foot of the Larzac plateau in the northern Languedoc, not far from its famous neighbours Grange des Pères and Mas Daumas Gassac.
The building's origins date back to the 16th century. Since 2023, Francis Ingrand and Sandrine Tannière, a couple from Montpellier, have run the 96-hectare estate, 49 hectares of which are planted with vines. Farmed organically since the 2020 vintage, the vineyard produces wines classified under the AOP Terrasses-du-Larzac and Languedoc, as well as the IGP Saint-Guilhem-le-Désert and Pays d'Oc.
