Wine details
This IGP Saint Guilhelm le Désert. Mas de Daumas Gassac Red 2023
At the heart of Languedoc, between the vineyards of Aniane and the Larzac plateau, the IGP Saint-Guilhem-le-Désert permits remarkable diversity: the specifications allow free choice among 112 grape varieties, for still wines as well as wines from overripe grapes, in red, rosé and white. Initially recognised in 1982 as “vin de pays de Saint-Guilhem-le-Désert”, it may draw on the complementary geographical units “Cité d'Aniane” and “Val de Montferrand”.
This wine blends Cabernet Sauvignon, Merlot, Pinot, Tannat, Cabernet Franc, Petit Verdot and rare varieties such as Nielluccio, Montepulciano, Saperavi, Carménère, Tempranillo and Abouriou. Slow extraction, gentle pumping-over and long fermentation with maceration, unfiltered, mark the vinification, followed by 12 to 15 months' ageing in barrels of varying age. The vintage, shaped by severe drought, saw slow and healthy ripening; grapes were hand-picked between 31 August and 13 September. The wine benefits from decanting before serving and pairs with red meats, game and cheese.
Food pairing
Red meats (especially lamb), game, cheeses. Decant 3–4 hours before serving.
