Chassagne-Montrachet in the 2023 Vintage

Known primarily for its white wines, Chassagne-Montrachet also produces red wines from Pinot Noir, shaped by the brown, limestone-rich and stony soils of the Côte de Beaune. Recognized by decree in 1937, this village appellation spans the communes of Chassagne-Montrachet and Remigny, and counts 55 climats classified as Premier Cru.

This Pinot Noir is hand-harvested and sorted on arrival at the winery, then undergoes an 18- to 21-day fermentation maceration in temperature-controlled wooden vats, followed by 14 to 16 months of aging in oak barrels (20 to 30% new oak). The nose is intense, with aromas of ripe red and black fruit, cherry and raspberry, lifted by smoky notes evolving toward spice and slightly animal tones such as leather and musk. The palate is fleshy, with notable minerality, a structured body, ripe tannins and a long, aromatic finish. Serve at 15-16°C, with an aging potential of 3 to 5 years or more, alongside roasted or braised red and white meats, or medium-strength cheeses.

Food pairing

Roast or braised red and white meats, medium-strength cheeses.

Maison Albert Bichot

Maison Albert Bichot, headquartered in the heart of Beaune, carries a Burgundian family tradition forward with an eye firmly on the future.

The Bichot family's roots trace back to 1214, taking hold in Burgundy from 1350 at Châteauneuf-en-Auxois, where its emblem, a doe, first appeared and has remained unchanged ever since. In 1831, Bernard Bichot founded a trading house under his name in Monthélie; his son Hippolyte later added the family's first vineyards, in Volnay. In 1912, Albert Bichot I settled the company permanently in Beaune, and Albert Bichot II went on to open the house to international trade.

Since 1996, Albéric Bichot, the sixth generation to lead the house, has expanded its estate holdings to six domaines spanning northern to southern Burgundy, now totalling over one hundred hectares of vines in its own right. The house has begun converting its Côte-d'Or vineyards to organic farming, and harvesting there is done by hand.

At Sélection Boudras, we value this house for the breadth of its terroirs: our selection includes seven of its wines, spanning Montagny, Chablis, Hautes-Côtes de Nuits, Chassagne-Montrachet, Fleurie, Mâcon-Pierreclos and Griotte-Chambertin.
