Domaine Ellevin

Domaine Ellevin, a family estate in Chichée, southeast of Chablis, produces precise, terroir-driven wines from the northern reaches of Burgundy.

The family has long cultivated vines in the region; in 1975, Jean-Pierre Ellevin expanded the estate and devoted it to vinifying Chardonnay for Chablis. His son Alexandre, the fourth generation, joined in 2003 to oversee the winemaking. The estate's 16 hectares, planted exclusively to Chardonnay, spread across both banks of the Serein and yield Chablis, Chablis 1er Cru Vaucoupin, Chablis 1er Cru Vosgros, Petit Chablis and Crémant de Bourgogne.

The soils are worked by hand by the family itself to limit the use of pesticides, while vinification remains traditional, carried out in tank with partly spontaneous fermentation. The domaine combines family tradition with modern precision, favouring clarity, freshness and mineral expression.

At Sélection Boudras, we value Domaine Ellevin for its characterful Chablis, which bring together tension, elegance and authenticity.

Freshness and minerality define this Chablis 1er Cru, crafted from the local chardonnay, known here as beaunois. The Vosgros climat, south of the village on the left bank of the Serein, benefits from a south and southwest amphitheater-shaped exposure sheltering it from winds, on clay-limestone Kimmeridgian soil; combined with its neighbor Vaugiraut, it spans 22.5 hectares.

The color shows a deep, bright golden yellow, while the nose is fragrant, flattering and delicate, with white flower notes and fine aromatic freshness.
