His vines grow amid a landscape defined by great limestone cliffs, where Chardonnay finds its fullest expression of flavour and texture. In the vineyard, David Fagot practises phytotherapy using plant extracts; in the cellar, his work follows the lunar calendar.\u003c\/p\u003e\u003cp\u003eDavid is the most engaging winemaker we have met. He is captivated by the forces of nature and works entirely in harmony with them. This deep conviction shows through in his “wines of awakening,” each said to carry its own energy and to convey the richness of the Universe.
